I just love salsa! This easy salsa utilizes a vegetable that many people in America shy away from…zucchini! However, this vegetable it one of the easiest to grow in your backyard. I mean, plant it, water it, and it grows. This recipe can be store bought as well. Today’s Golden Zucchini Salsa is all from my garden except for the red onion and lime juice.
The beauty of this recipe is using this lovely vegetable, Golden Zucchini (squash). It gives this salsa that added splash of color and taste.
This recipe fills up a quart size jar, but SOMEONE in my family got to the salsa before I could get a picture of the full jar. Must be good if it can’t last 15 minutes in the fridge at my house!
- 1 c. Diced tomatoes
- 1 c. Diced golden zucchini
- 1/4 c. Diced red onion
- 1/4 c. Chopped Cilantro
- 1/2 t. Salt
- 1/4 t. Pepper
- 1 T. Lime Juice
Dice and chop all of the vegetables. Stir in salt, pepper, and lime juice. Serve with a side of chips.
And there it is! Super easy!
This recipe is such a hit at my house that my family will actually eat zucchini now. You can substitute other types of zucchini, including the regular green kind. The flavor of the zucchini is not very noticeable and actually adds to the taste and texture. It is not sweet and not too spicy either.
